Lambs that graze on salt marshes produce a quality meat that has a flavour, colour and texture that is like no other. These unique characteristics are created by the multitude of wild grasses and herbs that are only found in estuary salt marshes. Grasses like puccinellia, and herbs like sea lavender and marsh samphire.
About us
Thoroughly Wild Meat are one of the UK’s leading specialists in Salt Marsh Lamb, we source from the Bridgwater Bay nature reserve on the North Somerset coast and from the the Glastraeth Marshes between Portmerion and Talsarnau in North Wales. The season starts in late June to early July – with young spring lambs – the meat has a very pale colour and an unreal tenderness. As we draw on through into high Summer and early Autumn the summer grazing adds more and more flavour to the meat and it develops a darker colour.
